While making mum-in-law's lovely chocolate crunch cake - the mint version - one generally prefers to achieve a one-phase fudge-system.
Not two phases, like during my first attempt. I will blame it on either the cream having been frozen, or the timing of peppermint oil addition. For sure, it was someone/thing else's fault - not mine!
Call me bold, but I'm ready to state that two-phase results are generally frowned upon in cooking.
